At Kashi, we are all about a wellness lifestyle. We are curious about new tastes and flavors and love to experiment with different food groups. When our team was recently given the opportunity to get hands-on with kombucha -- a fermented and fizzy sweet tea drink -- it was only natural, then, that we’d say “Yes please!” Our virtual workshop with Austin Durant from Fermenters Club was so fun that we knew we had to share what we learned with you! WHAT EXACTLY IS KOMBUCHA?
If you’re not a kombucha aficionado yet, let us give you a little background to this wonderful fizzy drink. Kombucha -- pronounced kahm-BOO-chuh -- is a fermented and sweetened tea that is thought to have originated in ancient China. To make kombucha, sweetened green or black tea is fermented with a symbiotic colony of bacteria and yeast, often referred to as a SCOBY. You can add anything from herbs and spices to fresh fruit and veggies to add flavor to “booch.”
WHAT ARE THE BENEFITS OF KOMBUCHA?
Besides the fact this fizzy fermented drink tastes ah-mazing, there are plenty of other reasons to consider brewing and drinking it. Here are some of the benefits we were most excited about.
✔ Mental Health
Kombucha contains psychobiotics, a group of probiotics that affect central nervous system related functions and behaviors that are mediated by the gut-brain-axis. According to this article from Science Direct, “Some psychobiotics strains were reported to inhibit inflammation and decreased cortisol levels, resulting in an amelioration of the symptoms of anxiety and depression.” In other words, kombucha may support mental wellness...something we can all drink to!
✔ Gut Health
Because of the fermentation process, kombucha is naturally rich in probiotics, something that may improve overall gut health. As this article from Harvard Health Publishing explains, “A useful way to view probiotics is that they promote growth of "good" bacteria, while keeping "bad" bacteria in check.”
✔ Antioxidant Rich
Kombucha contain polyphenols, micronutrients that we get through certain plant-based foods. Polyphenols are packed with antioxidants (substances that can prevent or slow damage to cells caused by free radicals) which can lessen inflammation in the body, according to the Journal of Chemistryreview. Inflammation is at the root of most disease, and diet and lifestyle are two of the best ways to keep inflammation in control.
WHY BREW KOMBUCHA AT HOME?
Kombucha has seen a huge increase in popularity in the past few years, and you can buy it in most grocery stores. So why go to the effort of brewing your own, you may ask? As it turns out, there are many reasons! Here are our top three:
1. You’ll save money
Marketed as an artisanal drink, kombucha is not cheap. In fact, you’ll end up paying between $3 to $4 for one small bottle in the store. According to Austin, homemade kombucha will set you back approximately $0.12 a gallon.
2. It’s easier than you think
You can order a Kombucha Starter Kit that includes your very own SCOBY, starter liquid, and recipe card directly from Fermenters Club, and then simply follow the instructions step-by-step. We ran through this process ourselves during our workshop, and it was so simple.
3. It’s so shareable

WHAT ELSE SHOULD I KNOW ABOUT KOMBUCHA?
During our workshop, our Kashi team had plenty of questions about kombucha. The following are some we thought you might ask too (along with Austin’s answers.)
Can you drink too much kombucha?
Too much of anything is a bad thing, but drinking kombucha is very safe. There are no known cases of people dying from eating too much of a fermented food.
How often should you drink kombucha?
For starters, 16oz a day. (Note: some people may benefit from starting with smaller amounts of kombucha and then working up to this.)
Why do you need to use filtered water when brewing?
Filtered water is purified, whereas by simply boiling tap water, you don’t remove things such as chloramines, which can negatively affect the fermenting microbes.
Will you feel the effects of the caffeine from the tea after it is brewed?
Yes. The SCOBY consumes the sugar, but not the caffeine. It’s not advised to drink kombucha in the evening if you are sensitive to caffeine.
Does home brewed kombucha contain alcohol?
The fermentation process means kombucha contains about 0.5-1% alcohol by volume.

How much kombucha should you drink a day?
If your new-found love for kombucha has left you wondering how much kombucha you should drink in a day, you’re not alone. There’s no right or wrong answer, in fact, it will be different for everyone. The amount you should drink will depend on several factors, these may be things like: whether your kombucha is homemade or shop-bought, the alcohol content, whether you have any medical conditions or if you’re pregnant or breastfeeding. There are a lot of things to think about, but the best approach is to listen to your body and do what’s right for you.
How often should you drink kombucha?
Equinox Kombucha is so delicious, we wouldn’t blame you for wanting to drink it all the time, and while it’s perfectly safe, like most things, kombucha is best enjoyed in moderation. So, when considering how often you should drink kombucha, you could think of it like fruit juice – one to three servings a day is a safe amount. Here at the Equinox Kombucha HQ, employees typically drink one or two bottles of kombucha a day, and this gives them a boost and helps them feel their best. However our MD, Dan Spayne loves booch so much, he probably drinks four or five! As for when you should drink it, kombucha can be best enjoyed in the morning, with meals or as a post-workout drink.
How much kombucha should you drink daily as a beginner?
If you’re new to kombucha, you might experience ‘detox-like’ effects. This is down to your gut taking in probiotics that it might not be familiar with. If you’re worried about how much kombucha you should drink or how your body will react, you might want to try drinking it in smaller quantities and building up, or diluting it with water. If you’re used to fermented foods, such as kimchi, it’s unlikely you’ll experience this, but if you’re not, these effects will quickly improve and you’ll soon begin to feel the benefits of fermented tea, such as an immune boost, an energy boost and generally feeling healthier.
How often should you drink kombucha when pregnant or breastfeeding?
More often than not, the answer to how much kombucha you can drink when pregnant or breastfeeding comes down to whether your kombucha is homemade. Homemade kombucha can have higher levels of alcohol and caffeine than shop-bought kombucha, so best to stay on the side of caution here. However, Equinox Kombucha contains very small amounts of alcohol and caffeine, making it safe for everyone to enjoy including children, pregnant and breastfeeding women and Muslims. But if you have any uncertainty or concerns, it’s always best to consult your GP.
How much kombucha should you drink a day if you are diabetic?
If you’re a diabetic and you’re thinking about how much kombucha you should drink in a day, you could try diluting kombucha with water – it will still taste great and give you all of the health benefits with less of the sugar. It’s also worth remembering that Equinox Kombucha doesn’t contain as much sugar as most fizzy drinks or fruit juices and it can make a great swap that will even take the edge off any cravings. Some studies show it can even help to manage Type 2 diabetes, as it’s made from green tea which is known to reduce blood sugar levels. However, the amount of kombucha you should drink as a diabetic will vary from person to person, and depend on the type of kombucha you’re drinking. It’s always worth checking the label for sugar content and checking your sugar levels before drinking kombucha.
So, whether you like it, love it or you’re quite simply obsessed with kombucha, the amount you should drink and how often you should drink it will be different for everyone. How do I incorporate kombucha into my day to day? How much can I take to feel its effects? At what time is it best to drink kombucha? You have heard a lot about kombucha, of the healthy benefits of this fermented tea with ancient origins, but you have some doubts that you need to clear before you start drinking it. We hope these guidelines will be helpful to you:
- If you have never drunk kombucha before, start with about 100 milliliters a day. Depending on tolerance, increase the dose to take it a couple or three times a day.
- Drinking kombucha is unlikely to cause any side effects. At most, you will notice more bowel movement. Typically, you will experience a sense of well-being.
- Drink kombucha when you feel like it. On an empty stomach, you will enhance its detoxifying effect. Before or after meals, it will improve your digestion thanks to its natural probiotics.
- If you are especially sensitive to caffeine, we recommend not drinking kombucha in the evening. Although it has about six times less caffeine than a cup of coffee, it could affect your sleep.
- You must bear in mind that, like all fermented foods, kombucha contains a little alcohol generated naturally during its preparation. It is a very small amount: a little less than 1% of the drink.
- Are you hangover? Try having a glass of kombucha. This fermented tea greatly facilitates the work of detoxification of the liver and, with it, that of your body. It will help you for sure!
- Make it your substitute for sodas, coffee, and low-alcohol beverages like beer.
- If you are a pregnant or nursing mother, consult your healthcare professional about consuming kombucha. Ours is made following the original recipe, it is not pasteurized. In this way, it preserves the natural probiotics generated during its fermentation. In addition, it has detoxifying effects that you should be aware of.
- Before offering it to a child, keep in mind that it contains a little caffeine and less than one degree of alcohol.
- For some people with specific health circumstances, such as those suffering from bacterial overgrowth (SIBO), the consumption of kombucha is not recommended. We advise you to solve this problem in order to introduce fermented tea into your diet. In other circumstances, such as diabetes, candida or other pathologies, we refer the decision about the consumption of kombucha to your health specialist.

When it comes to fitness, there are various trends that come and go, but the worthy ones always stay. Kombucha tea is definitely one of them! Essentially a beverage with a tangy and fizzy taste, kombucha is primarily known for its prebiotic and probiotic properties.
It is an ancient beverage that is said to have its roots in south Asia, but it has recently gained popularity for its various health benefits. You will find kombucha drinks at restaurants, as a packaged beverage at supermarkets, and then there are experts who conduct workshops on how you can prepare it yourself!
So, what exactly is kombucha tea?
To put it very simply, kombucha is a fermented tea with powerful probiotic properties that can be extremely beneficial for our health.
It is prepared using bacteria, yeast and sugar added to tea. You can use green tea to add that extra dose of goodness.
Now, the fermentation process can last for up to a week, or more. During this time period, the bacteria-yeast combination will form a pale white layer and it will start floating on top of the tea. The layer looks like a mushroom in terms of colour and texture. Hence, kombucha is often called ‘mushroom tea.’
This layer is called SCOBY which is short for symbiotic colony of bacteria and yeast. It can be used to prepare another jar of kombucha!
All these processes cause the mixture to get fermented, leading to the production of acetic acid and gases that make it a carbonated beverage.

Well, here are three ways in which kombucha tea can help your health:
It is a powerhouse of antioxidants
Kombucha, especially when made out of green tea, has powerful antioxidant effects that can fight the action of free radicals, which are responsible for cell damage. Healthy cells will help you steer clear of diseases and ensure your body keeps functioning properly. In fact, multiple rat studies published on PubMed Central have concluded that kombucha can be helpful in clearing toxins from the liver.
It is rich in probiotics
Not enough can be said about how important it is to take care of our gut health given that it affects all functions of our body. Kombucha packs a punch of probiotics to our diet, which keeps the digestion on track, reduces inflammation, helps the body get rid of toxins and manages weight loss. These effects of consuming probiotic tea can be extremely beneficial for health in the long term.
It contains essential vitamins
Kombucha has a generous amount of vitamins, particularly C and B. Regular consumption of this beverage can minimise the chances of deficiencies and the issues caused by them. What’s more, the presence of these vitamins will also improve your immunity, enhance bone health and boost energy levels.

When looking at the slimy, alien-looking kombucha starter, you might wonder, “Can you actually eat a kombucha Scoby?” It might look strange, but yes, the kombucha starter is absolutely edible. It’s also been suggested that the Scoby can help normalize blood sugar and cholesterol levels.
Can you wash a scoby?
When working with your scoby, make sure you have thoroughly washed your hands prior to touching the scoby. You can wash with natural, unscented dish soap like this one, or use food-grade gloves.
How can you tell if kombucha is bad?
The first and most obvious sign of spoilage is the presence of mold. It’s rare and happens mostly with homemade kombucha or an old one that developed its own baby SCOBY (more on that below) on top, and mold started growing on it. If there’s mold, throw it out.

How is GT’s Kombucha made?
Consistent with Eastern tradition, all of our Kombucha is authentically crafted with organic green and black tea, a sugar source (SYNERGY = organic kiwi juice, CLASSIC & HARD = organic cane sugar), and a SCOBY. To ensure the viability of the living probiotics, we never process, pasteurize (heat), filter, or dilute our Kombucha.
We begin by brewing a sweet tea made from black tea, green tea, and an organic sugar source. To that, we add a SCOBY and let the brew ferment in a serene environment for several weeks. Before bottling, we develop unique flavors by pairing our raw Kombucha with organic whole ingredients: fruits, vegetables, botanicals, herbs, and spices. We never add artificial colors or flavors.
Where are the ingredients in GT’s Kombucha sourced from?
Whenever possible, we source our ingredients from within the United States. Since harvest season for many ingredients falls during the warm Summer months, we also source some of our ingredients from certified organic farms in Central and South America. Our black and green teas are sourced from organic farms in India.

Drinking “too much” Kombucha will not harm you. However, we subscribe to the motto of “all things in moderation” and suggest listening to your body. Our suggestion is to cap consumption at three 16 oz bottles per day.
Can children drink GT’s SYNERGY Kombucha?
Our SYNERGY Kombucha is safe for children and can also be a better-for-you alternative to sugary juices or soda. For children ages ten and under, we recommend limiting their intake to about 4-6 ounces per day. If you are unsure of introducing something new to your child’s system, we recommend consulting with your healthcare professional or pediatrician before consuming.
I have a sensitivity to alcohol. Can I still drink Kombucha?

Can I drink GT’s SYNERGY Kombucha if I’m pregnant or breastfeeding?
We have heard from many mothers who continue to drink Kombucha during pregnancy and while breastfeeding. However, if you are unsure of introducing something new to your system during this time, we recommend consulting with your healthcare professional due to the delicate nature of pregnancy and breastfeeding.
Does Kombucha need to be consumed with a meal?
No. Kombucha can be enjoyed before a meal, with a meal, after a meal, or any time in between.
When is the best time to drink Kombucha?
There’s no wrong time to drink Kombucha. Drink in the morning for accelerated digestion, midday for a natural lift, or later in the day to curb cravings.
Why do you use kiwi juice instead of cane sugar for GT’s SYNERGY Kombucha?
Kombucha requires a sugar source for fermentation, which can come in the form of cane sugar, honey, agave, fruit juice, etc. For our SYNERGY offerings, we choose organic kiwi juice because of its premium quality and the way it complements our Kombucha’s taste profile.
If I’m allergic to kiwi juice, can I drink GT’s SYNERGY Kombucha?
The kiwi juice is a process ingredient that gets consumed by the SCOBY during fermentation. We’ve run tests and learned that those with kiwi allergies generally do not have any reactions to our Kombucha. If you have any concerns, we recommend consulting with your healthcare professional.
How much caffeine is in GT’s SYNERGY Kombucha?
All of our SYNERGY offerings are considered naturally decaffeinated—a result of the fermentation. Each flavor contains about 4mg to 8mg of caffeine per 8-ounce serving.
(For reference, an average cup of brewed coffee has about 100mg of caffeine per 8-ounce serving, while decaf has about 5mg of caffeine per 8-ounce serving.)
How much sugar does GT’s SYNERGY Kombucha have?
Immediately after fermentation, our base Kombucha contains an average of 6g of sugar per 8-ounce serving. Once we add in the juice or fruit puree, each flavor will vary from 6g-10g of sugar per 8-ounce serving.
What are the probiotics in GT’s SYNERGY Kombucha?
The dominant strains of probiotics in GT’s SYNERGY Kombucha are Lactobacillus Bacterium and Bacillus coagulans GBI-30 6086. There are a few others as well, which support microbiome diversity. Here at GT’s, we believe in a method of “aerobic wild fermentation,” meaning we rely on naturally occurring bacteria and yeast to develop this offering in the way Nature intended.
Why are there floaties in the bottle?
The floaties are a good thing! They are actually active strands of living culture—another sign of a successful fermentation, which is also one of the reasons we serve our Kombucha unfiltered. If left unrefrigerated, these floaties will form into a SCOBY that you can use as a starter to craft your own home brew.
Why is GT’s Kombucha fizzy?
The effervescence (fizziness) in our Kombucha is created by the fermentation. Unlike sodas which are artificially carbonated, this elegant effervescence is 100% naturally occurring and continues to develop over time. That’s why bottles of our Kombucha closer to the Enjoy By date will be more effervescent, while fresher batches will be less effervescent. Remember: DO. NOT. SHAKE.
Why do some bottles of GT’s Kombucha have ingredients settling at the bottom?
Simply put, we use real whole ingredients and no preservatives, emulsifiers, or homogenization processes. As a result, settling may occur. Feel free to gently rock the bottle back and forth or give it a gentle roll of the wrist to disperse the sediment. But remember: DO. NOT. SHAKE.
Why does it say, “Do not shake,” on the bottle?
Kombucha is naturally effervescent. Therefore, similar to carbonated drinks, it will have a “Champagne Effect” if you shake it. We recommend turning the bottle upside down and gently rolling from side to side to disperse the sediment.

How should GT’s Kombucha be stored?
Our Kombucha is a raw food containing billions of living probiotics, so it should ALWAYS be kept chilled in a refrigerator between 33-37 F°. Bottles should be stored upright and never on their side.
